My Story
After more than 20 years as a restaurant owner, pastry chef, and chocolatier, I found myself craving a simpler, more intentional way to create. I’ve always loved the artistry of chocolate—transforming beautiful ingredients into something meaningful—but over time, the demands of running a brick-and-mortar business began to pull me away from that joy.
In December 2019, I made the decision to sell Fleur de Cocoa, my French patisserie and chocolate shop in Los Gatos, California. It was a deeply meaningful chapter of my life, and letting it go allowed me to refocus on what mattered most: creating chocolate with passion, without the weight of a traditional storefront.
By Spring 2022, Blue Canary Sweets began to take shape—built from reflection, creativity, and a desire to return to the heart of my craft. I thought about what I loved most from my years in the kitchen, and what I had missed along the way. The answer was clear: chocolate bars.
There’s something special about their simplicity.
Chocolate bars are approachable and unfussy, yet they hold endless potential to be refined, elegant, and gift-worthy. At Blue Canary Sweets, that balance is everything—thoughtfully crafted chocolate that feels both elevated and effortless, made to be savored, shared, and enjoyed every day.
